How to Make Badam Burfi
Step 1 – Prepare the Ingredients
Heat a pan on low heat, add almond flour and semolina (rava) to the pan, and roast it for 2-3 minutes or until it turns evenly golden. Transfer the roasted mixture to a plate.
Step 2 – Make Barfi Layer
In the same pan, combine water and sugar to make sugar syrup.
Add cardamom powder and a pinch of saffron strands to the water and sugar mixture.
Let the mixture simmer for a few minutes to let the saffron release its color and thicken slightly.
Add the roasted semolina, milk powder, and roasted almond flour to the sugar syrup. Stir continuously until the mixture thickens.
Add a tablespoon of ghee to the mixture and mix everything well.
Step 3 – Setting the Barfi Layer
Spread a small amount of ghee or oil on a tray or a mold. It will prevent the barfi from sticking to it.
Spread the almond barfi mixture evenly in the greased tray. Flatten it using a spatula or the back of a spoon.

Step 4 – Sugar Syrup and Nuts Layer
In a separate saucepan, add sugar and water. Cook till the sugar melts, then turn off the heat.
Add the roughly chopped nuts to the sugar syrup. You can use a variety of nuts like almonds, cashews, or pistachios for added crunch and flavor.
Step 5 – Assembling and Setting
Immediately, spread the crunchy nut mixture over the almond burfi layer. Make sure that the nut mixture is spread evenly.
Let the barfi set for 4-5 hours or overnight. After 4-5 hours, gently touch the barfi to confirm that it is fully set. Cut the burfi into desired shapes before serving!
Optionally, you can apply silver vark / silver leaf for a festive touch.
Tips to Make the Best Badam Burfi
- Be careful not to over-roast almond flour, as it can affect the taste.
- When spreading the barfi mixture in the tray, aim for an even thickness.
- Let the badam burfi set in the refrigerator for as long as you can. This will make sure that the burfi is well-set and has a firm consistency.
- Use a sharp knife dipped in warm water for clean and smooth cuts. This will get you neat pieces of the almond burfi.
- Applying silver vark / silver leaf is optional but adds an elegant touch. If using, apply it once the barfi has fully set.

Ingredients
Barfi Layer
- 1/2 cup sugar
- 1/2 cup water
- pinch of saffron
- 1/2 tsp cardamom powder
- 1 cup roasted almond flour
- 2 tbsp roasted semolina
- 1/2 cup milk powder
- 1 tbsp ghee (clarified butter)
Dry Fruit Layer
- 2 tbsp sugar
- 2 tbsp water
- 1/4 cup nuts chopped
- 1 no silver vark / silver leaf optional
Instructions
Barfi Layer
- Heat a pan on low heat. Add almond flour to the pan and roast it for 2-3 minutes.1 cup roasted almond flour
- Once the almond flour is evenly roasted, transfer it to a plate.
- Heat a pan, add water, sugar, cardamom powder, and a pinch of saffron. Bring it to a boil.1/2 cup sugar, 1/2 cup water, 1/2 tsp cardamom powder, pinch of saffron
- Mix in milk powder, semolina (rava) and almond flour. Cook until the mixture thickens.2 tbsp roasted semolina, 1/2 cup milk powder, 1 cup roasted almond flour
- Add ghee to the mixture and combine it well.
- Transfer the thickened mixture to a greased tray. Flatten it evenly and let it cool.

- Stir chopped nuts into the sugar syrup.1/4 cup nuts
- Spread the nuts mixture evenly over the kesar badam layer in the tray.
- Place the tray in the refrigerator and let it set for 4-5 hours.
- Optionally, apply silver vark for an elegant touch. Once set, cut the barfi into pieces of your desired shape and size.
Notes
- Achieve the right consistency when making sugar syrup. It should be thick enough to coat the back of a spoon.
- Choose a variety of chopped dry fruits for layering, like almonds, cashews, and pistachios, for added texture and visual appeal.
- If using silver vark for garnish, apply it gently for an elegant finishing touch.
