Millet Ladoo Recipe

Step 1. Prepare Ingredients

Heat ghee in a pan over low to medium heat. Let it melt completely.

Step 2. Roast Millet Flour

Once the ghee is melted, add the multi-millet flour to the pan. Sauté the multi-millet flour over low heat for about 8 to 10 minutes. Keep stirring to prevent uneven browning or burning.

Step 3. Add Crunch

After the flour is evenly roasted, add the chopped nuts, melon seeds, and cardamom powder to the pan. Sauté the mixture over low heat for another 2 to 3 minutes.

Step 4. Melt Jaggery

In a separate saucepan, combine the jaggery and water. Let the mixture heat until the jaggery dissolves completely in the water.

Continue cooking until the jaggery syrup is ready, then remove the saucepan from heat to prevent burning.

Step 5. Combine Ingredients

Combine the roasted millet flour and the melted jaggery syrup thoroughly.

Step 6. Shape into Ladoos

To begin, grease your palms lightly with ghee (clarified butter) or oil, to prevent sticking. Take small portions of the mixture in your hands. Gently roll it between your palms to create a round shape.

Apply light pressure to make sure the ladoo holds its shape well. Repeat this process for the remaining portions of the mixture.

Step 8. Serve or Store

Let the ladoos cool naturally at room temperature. Once they have cooled completely, transfer it into a clean and dry airtight container. Store the container in a cool and dry place.

Recipe Tips

  1. You can substitute jaggery with other sweeteners of your choice such as white sugar, brown sugar, date palm jaggery, dates syrup, etc.
  2. I have used multi-millet flour in this recipe but you can use any millet flour of your liking. Here I am using Multi-Millet Flour from Nutty Yogi.
  3. Don’t overroast the millet flour as it might lead to a bitter taste.
  4. If the laddoos are not holding shape, reheat the millet-jaggery mixture for 3-5 minutes or add hot melted ghee (clarified butter), then try to make laddoos.
  5. Don’t let the mixture turn cold, start making laddoos when the mixture is warm enough for you to hold.

Ingredients
  

  • 2 tbsp ghee
  • 1 1/2 cup multi millet flour
  • 1/4 cup nuts chopped
  • 1 tbsp melon seeds
  • 1/2 tsp cardamom powder
  • 3/4 cup jaggery
  • 1/4 cup water

Instructions
 

  • In a pan, add ghee and let it melt. Add the multi-millet flour to the pan. Sauté for 8-10 minutes on low heat.
    2 tbsp ghee, 1 1/2 cup multi millet flour
  • Add the chopped nuts, melon seeds, and cardamom powder. Sauté for 2-3 minutes. Set aside.
    1/4 cup nuts, 1 tbsp melon seeds, 1/2 tsp cardamom powder
  • In another saucepan, combine jaggery and water. Cook until it forms a syrup-like consistency.
    3/4 cup jaggery, 1/4 cup water
  • In a mixing bowl, combine roasted millet flour and melted jaggery. Mix well until all ingredients are combined evenly.
  • Grease your palms with ghee to prevent sticking. Take small portions of the mixture and shape them into round ladoos.
  • Allow the ladoos to cool before serving. Once cooled, store them in an airtight container.
