A flavorful green chutney that is made from just a handful of simple ingredients such as fresh green garlic shoots, coriander leaves, green chilies, and spices.
This earthy chutney will add a burst of flavor to your meal and will also bring a hint of freshness.
In our home, green garlic chutney is a staple during the winter season when fresh green garlic shoots are easily available in the markets.
Beyond its delicious taste, this chutney also has a lot of health benefits. Additionally, its consumption brings a comforting warmth during the chilly weather.

Green Garlic Chutney Ingredients
Green Garlic: is the star of the recipe. It is young garlic that has not yet matured, giving a milder flavor than mature garlic bulbs. Both the green garlic stems and white garlic bulbs are used in this recipe. It adds a fresh, slightly spicy kick to the chutney.
Coriander Leaves (Cilantro): adds a freshness to the chutney. The garlic bulb’s pungency is reduced because of the freshness that green coriander leaves add to the chutney.
Green Chilies: add spice to the chutney. You can adjust the quantity based on your liking.
Roasted Gram Dal: acts as a thickening agent. You can use roasted peanuts or grated coconut as a substitute.
Lemon Juice: Freshly squeezed lemon juice balances the taste of the chutney and is used to preserve the chutney and prevent discoloration. Alternatively, you can substitute lemon juice with a small piece of tamarind.
Green Garlic Chutney Recipe
Step 1 – Wash the Green Garlic
Clean and separate the white and green parts of the young green garlic (garlic chives). Wash them with water and then chop the green part of the green garlic.
Step 2 – Transfer to Blender
In a blender or food processor, combine the chopped green garlic, garlic bulbs, green chilies, fresh coriander, roasted gram dal, lemon juice, salt, and water.
Step 3 – Blend the Ingredients
Blend the ingredients to a smooth, fine paste.
Step 4 – Taste and Serve
Taste the chutney and adjust the salt and lemon juice according to your preference.
Transfer the green garlic chutney to a clean, airtight jar. You can store it in the refrigerator for a few days.

Ingredients
- 1 cup green garlic leaves chopped
- 1/2 cup fresh coriander leaves (cilantro) chopped
- 2-3 nos green chilies chopped (adjust according to your spice preference)
- 2 tablespoon roasted gram dal
- 2 tablespoon lemon juice
- salt to taste
- water as required
Instructions
- Begin by thoroughly washing the green garlic leaves and coriander leaves. Pat them dry with a clean kitchen towel or paper towel.1 cup green garlic leaves
- In a blender or food processor, combine the green garlic leaves, coriander leaves, green chilies, roasted gram dal, lemon juice, and salt.1/2 cup fresh coriander leaves (cilantro), 2-3 nos green chilies, 2 tablespoon roasted gram dal, 2 tablespoon lemon juice, salt
- Blend the ingredients together until you achieve a coarse paste. If needed, add a little water to facilitate blending, but keep in mind that the chutney should have a slightly thick consistency.water
- Taste the chutney and adjust the salt and lemon juice according to your preference. You can also add more green chilies if you prefer a spicier kick.
- Once you’re satisfied with the taste and texture, transfer the Green Garlic Chutney to a clean, airtight jar.
