Ingredients
  

  • 1 cup whole wheat flour (atta)
  • 1 cup ghee (clarified butter)
  • 1 cup sugar
  • 2 1/2 cups water
  • 1/4 cup nuts (almonds and cashews) chopped (optional)

Instructions
 

  • In a heavy-bottomed pan, heat ghee over medium heat.

  • Add whole wheat flour (atta) and roast it on low to medium heat until it turns golden brown. Keep stirring continuously to avoid burning.

  • In a separate saucepan, add water. Bring it to a boil.
    2 1/2 cups water
  • Add sugar to the roasted flour. Then, slowly add the boiled water to the roasted wheat flour, stirring continuously to avoid lumps. Ensure a smooth and lump-free consistency.
  • Cook the mixture on low heat, stirring continuously. The mixture will start leaving the sides of the pan.

  • Add chopped almonds and cashews (if using) to the mixture. Continue stirring until the nuts are well incorporated.

  • Once the Kada Prasad achieves a halwa-like consistency and ghee starts separating, it is ready. Serve it warm!

  • Take your time to roast the whole wheat flour in ghee patiently.
  • Opt for high-quality whole wheat flour (atta).
  • You can enhance the flavor with cardamom powder. 
  • Achieving the right consistency is crucial. Stir continuously while adding adding water to avoid lumps. The halwa should leave the sides of the pan and have a smooth texture.
  • Atta Halwa is best enjoyed when served hot.
